Cava is a sparkling wine of Denominación de Origen (DO) status, most of which is produced in Catalonia. It may be white (blanco) or rosé (rosado). The macabeu, parellada and xarel-lo are the most popular and traditional grape varieties for producing cava. Only wines produced in the champenoise traditional method may be labeled cavas, those produced by other processes may only be called "sparkling wines" (vinos espumosos). In the past, cava was referred to as "Spanish champagne", which is no longer permitted under European Union law, since Champagne has Protected Geographical Status (PGS) and Spain entered the EU in 1986. Colloquially it is still called champán or champaña in Spanish. According to Spanish law, cava may be produced in eight wine regions which include the Valencian Community where our cavas are produced which includes our cava brut made from organcially grown grapes.

Tasting Notes

Traditional method or “champenoise” method. Once the cuvée has been obtained from a white perfumed variety such as Macabeo with the combination of a full bodied Chardonnay, it is aged in the bottle for a minimum of 12 months. During this time the bottles are kept horizontal, called ‘ageing in stacks’, at a constant temperature of 15ºC, in order to carry out a second fermentation gathering the lees along the length of the bottle.

Straw yellow colour, with elegant and persistent bubbles. Clean and fruity aroma with prominent citrus character and an undertone of floral notes. The full bodied Chardonnay offers a magnificent presence on the palate, dry but at the same time fruity, and a lingering aftertaste with very well balanced carbonic gas.

Tasting Notes
This Cava is born of the union of the finest grapes from western Requena, grown on north-facing slopes, with patient, peaceful aging in our cellars. It has spent over 15 months at 17ºC, utterly undisturbed and with no sudden changes in temperature or light conditions. Day by day it has grown in complexity, fullness on the palate and elegance in its bubbles.

A gooseberry-colour Cava with reddish hints, luminous, with elegant and persistent bubbles. Intensely fragrant, it unfolds ripe red fruit aromas on a bottom note of patisserie and mocha, full-bodied and lasting on the palate. Balanced acidity, with hints of rye bread and a long finish.
